Paper Wrapped Chicken (Chee Pow Kai)

Chee Pow Kai Recipe

Chicken Marinate:
2 chicken thighs (deboned and cut into 4 pieces each)
2 TBSP oyster sauce
2 cloves of finely chopped garlic
3 TBSP Hua Diao Jiu
1 TBSP Ginger Juice
1 tsp of light soy sauce
1 TBSP sesame oil
Good sprinkling of white powder pepper *Marinate Chicken in the above for at least 2 hours.

Chicken Parcels:
8 spring onions (just the white part, smashed)
8 small sheets of baking paper **

Mix everything together under Chicken Marinate above and put it in a container or zip lock bag to sit for at least 4 hours or overnight in the fridge.

How to envelope the chicken.

When frying them, use your wok, put in around 1.5cm to 2cm depth of oil, heat till hot then fry for 8 mins, chicken side downwards in oil. Remove from oil and rest to cool then serve.

*** pressure point: enveloping the chicken in the paper tightly.
